Grains: Wheat? not much to my liking; I prefer rice. I need to change.
Vegetables: Carrot / beet /sweet potato not my favorites. Radish, garlic, okra are fine. I dont know much abt asparagus, celery, water chestnuts, rutabagas etc.
Legumes: cooking instructions will be followed (with cumin, garlic, asafoetide etc)
Nuts and seeds: Haven`t eaten too much of them.
Oil: I love sesame oil (with podis and sambar etc). Last month I had safflower oil - that could be the problem.
Dairy: Yogurt with water spiced with ginger and cumin (almost made to order for me - I also add asafoetida, coriander leaves and a green chilly)

Oldtimer, I think ur wife is in chennai and ur here alone thats why u feel lonely? Am i right? And getting bugged to cook... if i were you i would have taken the next bus to chennai and setteld down there... however i wanted to let you know that MTR Vada mix is damn good though its not part of your ayurvedic regimen i have given...:) but its yum... after eating all the ayurvedic food i indulged in this vice ystday... i bought packet and chopped some ginger, green chillies, and with some pepper and curry leaves the batter smelt yum and the vadas so delicious... of course u cannot flatten into that perfect vada being a man.. .lol but you can fry it round... Also remember for Vata folks, one pot meal is good... excess of anything is BAD FOR VATA.. Thats only part of the plan, i am still reading the books... i should have chalked out the plan in its entirety and given it to you but was tempted to give it to you right away :).....

Oldtimer, Diet for Vata: Sweet, sour and salty foods are generally good for Vata people, since they satisfy the system and reduce its insecurity about being well fed.. Bitter, pungent and astringent foods are less beneficial for Vata; they dry the system and intensify emotional instability, especially insecurity. Again avoid large amounts of any Taste, for Vata is aggravated by excesses. Grains: Of all grains wheat is most satisfying to Vs. Well cooked oats and rice are usually good. Buckwheat, corn, millet and rye all tend to be drying and so not as good for V as other grains. They especially must be cooked with plenty of water and with added butter, ghee or oil to reduce their dryness. Rice gruel is optimal. Yeasted bread filled with gas bubbles after fermentation is not a good staple food for V people. Vegetables: The V gut prefers cooked to raw vegetables. Best vegetables for V are Asparagus, Beets, carrots, celery, Garlic, green beans, okra, onion, parsnips, Radishes, Rutabagas, turnip, sweetpotato, water chestnuts. Fruits: Most fruits are good for Vs, except those that are naturally Astringent like cranberries and pomegranates, or those that are drying like Apples. All dried fruits, even the Sweet ones like figs and grapes are inappropriate for Vs unless they are reconstituted to normal juiceness by soaking in water or by stewing which heats them up well. Avoid unripe bananas. Otherwise ripe bananas, apricots, avocados, berries, cherries, coconut, pineapple, plums, papaya, peaches, pear, lemon, grapes, oranges, Melons are all good for Vs. Legumes: Legumes are the vegetable Kingdom`s equivalent of meat. They are high in difficult-to-digest proteins whose metabolic byproduct is nitrogenous waste. Nitrogen is gas and all gas increase Vata. Nitorgen has even been shown to be essential to the development of certain cancers that hate oxygen. High protein wastes are doubly dangerous in that they leach calcium from the system as they are expelled thereby potentially weakening the bones. To reduce increased intestinal gas from legumes which disturbs Vata soak them for at least an hour and throwing out the soak water before cooking. You can even boil them for 5-10 mins and discard that liquid before starting to cook them.. In India peas and lentils are most often split, splitting eliminates the indigestable outercoat. You may also sprout the legumes first and then wash off the hulls.. Vs should eat only a small amount of legume at any one meal. Even Tofu which is predigested can aggravate Vata if consumed daily. The best legumes for V are black lentils, red lentils, chick peas, mung beans. Cook ur legumes with corinander, cummin, garlic asofetida to give the spicy flavor. Nuts and seeds: Almonds are the best of all nuts. They should never be eaten with their skins, which irritate the lining of the gut, nor should they be blanced in hot water. Soak them in lukewarm water overnight and peel them next morning. But all nuts and seeds are are good for Vata people but are too concentrated for regular use unless they re made into nut and seed butters or milk. Food that is too concentrated resists penetration by digestive juices and is one of the chief causes of Vata-caused indigestion. Oil: In general, sesame is the best oil and safflower oil is the worst, but all oils are good for V. Almond oil is good for the brain, coconut and sesame for the hair and mustard oil for the skin.. (REMEMBER MUSTARD = HEAT and hence so good for vata) Dairy: Yogurt blended with water and spiced with ginger and cumin help remove Vata from the system. Spices: Asafofetida is one of the best spices for Vata control but should not be used by those whose liver or mind are too hot. All spices are good for Vatas and for VKs too.(VK = Vata and Kapha)...
